摘要: Abstract Garlic (Allium sativum) has been described as containing phytonutrients with healthy properties. In this study, the effect of a bioactive garlic food supplement intake on human plasma metabolome was examined aim understanding mechanisms action and involved pathways responsible for beneficial effects. With purpose, dietary intervention assay performed in thirty volunteers collecting samples before after one month daily consumption. Plasma were analysed by fingerprinting metabolomic strategy based HPLC-ESI-QTOF-MS. Our results revealed total 26 metabolites affected intake. general, alterations phospholipid metabolism shown, detecting an increase lysophosphatidylcholines, lysophosphatidylethanolamines acylcarnitines. It is also remarkable that level four fructosamines decreased assay. These are according antioxidant antiglycation properties have previously associated extracts.
