摘要: Waste or by‐products contains a substantial amount of nutrients. Fish silage is an alternative way for assessment fish discards and waste generated in the processing industries. The aim study was to evaluate potential use discard species (Equulites klunzingeri, marine Carassius gibelio, freshwater fish) chemical quality oil extracted from silages prepared with acid fermented methods. Lipid oils LAB strains evaluated terms thiobarbituric (TBA), peroxide value (PV), p‐Anisidine (AV), totox values fatty composition. results showed that PV, TBA, AV all were within acceptable limits edible oils. Recovered contained high level polyunsaturated acids (PUFAs), especially eicosapentaenoic (EPA) docosahexaenoic (DHA), serving as source good human consumption.
