摘要: Abstract An objectionable “earthy-musty” flavor is frequently found in intensively-cultured catfish which renders the fish unmarketable. Fifty-gram channel were held 150-liter stainless-steel tanks containing dense masses of either Symploca muscorum or Oscillatoria tenuis to determine capability these geosmin-producing blue-green algae impart this type offflavor fish. Within 2 days had acquired distinct earthy-musty similar odor algae. Flavor intensity reached a maximum at 10 days. When been for 14 transferred flowing, charcoal-filtered water, disappeared after Fish algae-free filtrate from culture off-flavor but slower rate than tanks. This indicated that could absorb compounds without ingesting algae, possibly across gill membranes.
