1H and 13C NMR‐based sugar profiling with chemometric analysis and antioxidant activity of herbhoneys and honeys

摘要: BACKGROUND Herbhoneys, relatively new bee products, are expected to have interesting medicinal properties. However, there is still a lack of data concerning their composition and antioxidant 1H 13C NMR spectroscopy coupled with chemometric analysis (PCA PLS-DA) assays (DPPH-ESR ORAC-FL) were used study 25 samples Polish herbhoneys honeys. RESULTS Antioxidant activity varied among the samples. The best properties exhibited by cocoa instant coffee herbhoneys. contents total polyphenols carotenoids in studied found be 70–1340 mg GAE kg−1 0–28.05 mg kg−1 respectively. No significant differences between herbhoney honey sugar profiles. PCA spectra DMSO-d6 resulted sample clustering due sucrose content. CONCLUSION Herbhoneys similar traditional honeys, being therefore equal nutritional value. There was noticeable influence extract concentration on observed effect.
