摘要: Abstract A non-thermal pasteurization technology is desirable to naturally preserve nutrient and organoleptic properties of packaged tender coconut water (TCW) distributed under refrigeration. The goal this research was assess the antimicrobial effectiveness ultraviolet light C (UVC) as a TCW. dean flow reactor used with wavelength 254 nm at residence time 14.0 s. experimental variables were three Reynold numbers (R e = 198.8, 397.7 596.4) two diameters transparent PFA tubes (3.2 mm 1.6 mm). TCW inoculated cultures Escherichia coli W1485 Listeria monocytogenes separately before passing through UV reactor. UVC treatment yielded 5.27 4.74 log 10 CFU/mL E. coli count reductions for 1.6 mm 3.2 mm ID reactors, respectively, whereas reduction 4.18 2.96 CFU/mL, respectively at Re = 596.4.
