摘要: Abstract A gas concentration transducer has been used to build an aroma sensor whose signals are related levels of delta and gamma decalactones, which the main volatiles that compose peach aroma. In order estimate efficiency assessing quality with sensor, its readings were compared classes determined by experts depending on fruit external appearance (colour, firmness, estimated maturity). The was able reproduce this classification a 75–85% success rate. No clear relationship found between signal other parameters, such as sugar content or firmness. However, preliminary tests have succesfully demonstrated possibility using these transducers detect rotten in cool chambers.
