Monitoring oxidative quality of pork scratchings, peanuts, oatmeal and muesli by sensor array

摘要: Asensor array(electronicnose)wassuccessfully appliedforpredictingthecontentofhexanal and other volatiles in different dry fat-containing products, showing the potential of replacing time-consuming traditional laboratory analysis by faster in-process monitoring methods. Unfortunately, prediction free radical content was not successful, making early oxidation sensor array infeasible. Owing to non-specificity sensors, a generic model could be generated even though series standards shown have high correlation between hexanal concentration individual or multiple responses. PCA models responses eg pork scratchings revealed clear separation samples stored experimental factor light versus darkness.  2004 Society Chemical Industry
