摘要: Publisher Summary This chapter describes the regulation of glucose metabolism in Saccharomyces cerevisiae and related yeasts view recent data. Metabolism growing depends on yeast strain, carbon source, physicochemical factors environment. Glucose breakdown proceeds via different pathways. Principally respirative, fermentative (anaerobic), respiro-fermentative have to be considered, but growth ethanol is also considered due diauxic pattern observed batch cultures. Ethanol accumulated during first phase with catabolism used for subsequent growth. The type cultivation conditions. Respirative possible feed-controlled systems only. shift governed by respirative capacity cells, therefore occurs above a certain glucose-feed rate. Respiro-fermentative primarily consequence an overflow reaction at level pyruvate when respiration saturated.
