摘要: Sesame oil is one of the most valuable due to its bioactive properties, unique taste, odor, and flavor. Therefore, consumers tend consume willing pay a higher price for sesame increasing awareness consuming healthier better food. However, subjected adulteration risks with lower vegetable oils which impairs consumer rights human health. In this study, we purposed an ATR-FTIR based method rapid detection food in oil. For purpose, was adulterated hazelnut, canola, sun flower different concentrations ranged from 1 50%. Cluster analysis FTIR spectra performed differentiation classification pure adultured samples. addition, calibration curve obtained determine relationship between actual adulterant concentration predicted using partial least square (PLS) each According these results, it could be concluded that technique has potential as non-destructive, rapid, effective alternative method.
