摘要: The nutritional profile of dorsal and ventral portions fillets from farmed yellowtail kingfish (YTK) (Seriola lalandi, Valenciennes, 1833) was assessed in winter summer months to evaluate if there were differential distributions proximate constituents, fatty acid composition mineral content seasonally through the dorso-ventral axis. YTK varied between two anatomical locations examined. In particular, a relatively large variation observed crude fat content, which decreased significantly fillet inversely proportional moisture protein content. Higher also fish sampled summer, compared those winter. omega 3/6 ratio remained constant but different seasons (summer > winter). index quality for EPA DHA markedly regarding portion season (summer > winter, ventral > dorsal), significant differences levels potassium, phosphorus, magnesium iron evident This study clearly shows profiles South Australia relative location season. increase knowledge gained this may lead improved farm management practices YTK, extend other commercially relevant species enhance production premium products.
