摘要: One steam-vacuuming unit (Unit A) was evaluated for removal of visible contamination and reduction bacterial counts on beef carcass surfaces in five processing plants; a second B) two those same plants at later date. Experimental treatments included appropriate Controls: steam vacuuming with or without contamination, knife trimming contamination. Depending the plant, carcasses were tested midline round. Each treatment applied to 103-cm2 area surface, which scored analyzed aerobic plate (APC) 25°C total coliform (TCC). Average reductions APC 0.57 0.72 log CFU/cm2 TCC 0.33 0.26 obtained by had no fecal Steam effectively (P < 0.05) cleaned soiled reduced microbial counts.
