摘要: A B S T R C The presence of ellagic acid and other nutraceutical compounds in muscadine grapes add value enhance the marketability this southern U.S. specialty crop. Due to its profile, muscadines may potentially become next “super fruit”. objective study was determine retention important phytochemical including anthocyanins, phenolics, flavonols, stilbenes organic acids from whole grape berries individual fruit parts following cold storage. Stilbene, acid, flavonol, phenolic were analyzed 11 cultivars 14 days storage at 4 ° C. major identified by their times characteristic spectra. Quantification made utilizing calibration curves external standards for each trans- cis-resveratrol, transand cis-piceid, myricetin, quercetin kaempferol.
