摘要: This work aimed to select new cassava (Manihot esculenta Crantz) varieties for human consumption as fresh roots. A total of twenty six were evaluated after eight, ten and twelve months planting. Parameters assessed follow: root productivity, starch, dry matter cyanide contents, cooking post-harvest deterioration. Root starch contents varied among harvest period. Nearly 81% the presented content within acceptable limits roots (less than 100 mg/kg raw pulp), by enzymatic method.
