摘要: SUMMARY— The phenoloxidase system in the tissues of mushrooms, potatoes, and apples was investigated using a polyacrylamide electrophoretic technique. enzyme shown to exhibit phenomenon multiple forms. form pattern obtained highly characteristic for each individual species variety studied, substrate specificity evident. mushroom (Agaricus campestris) consist at least nine distinct dl-dopa-reactive forms, three forms reacting with I-tyrosine. Potatoes (var. Rural Russet) showed 11 bands dl-dopa activity, while Golden Delicious) had activity. By introducing “multiphase” gel technique better resolution obtained. A group closely related mushrooms unique ability withstand temperature 70°C one hour. Sulfite, ethylenediamine-tetraacetic acid (EDTA) other treatments affected differently. Each behaved as an entity upon repeated elutions electrophoreses.
