摘要: Abstract The comparative studies on the interactions of β-casein micelles (β-CMs) with imidazolium-based ionic liquids (ILs) containing different hydrophobicity (1-octyl-3-methylimidazolium bromide [C8mim]Br and 1-butyl-3-methylimidazolium [C4mim]Br) have been carried out using turbidity, dynamic light scattering (DLS), transmission electron microscopy (TEM), conductivity, steady-state fluorescence isothermal titration microcalorimetry (ITC) measurements. structure microenvironmental polarity β-CM can be controlled by addition ILs. controlling effect depends much alkyl chain that attached to imidazolium ring IL. partitioning IL molecules in locations concentration characteristics In electrostatic attraction, binding cationic [Cnmim]+ headgroup should dominated hydrophobic interaction among tails domain β-CM. Also, C2-H could easily participate hydrogen bonding carboxylic moiety protein molecules. complementary results obtained from multitechnique approaches proved useful drawing mechanism between amphiphilic aggregates liquid architecture regimes, which will turn facilitate use protein–IL systems foods, pharmaceuticals, biotechnology related industries.
