摘要: Cereal products (flour and semolina) are of great importance in the Tunisian diet. Over one million tons cereal (soft hard wheat) consumed a year. Bread, pasta couscous main forms consumption providing more than 70% dietary proteins. The SMID, wheat grinding company has implemented ISO 22000 system involving essentially prerequisite programs (PRPs) HACCP principals. objective this study is to determine food safety practices procedures related management (ISO 22000). PRPs were identified prepare for HACCP.
