摘要: Abstract Rice (Oryza sativa seeds – Poaceae) is considered one of the most important grains, as it consumed by half world population. Various by-products rice industry, such bran and oil (RBO), have recently attracted much attention from both academia industry due to their high content added-value phytochemicals tocopherols/tocotrienols, carotenoids, γ-oryzanol, nutritional, pharmaceutical, cosmetic interest. In particular, a mixture triterpene alcohol phytosterol ferulates, characterized wide spectrum health-beneficial effects, including anticarginogenic, anti-inflammatory, antihyperlipidemic, neuroprotective, which are mainly attributed its significant antioxidant capacity. This chapter presents chemical characteristics γ-oryzanol components, classification biosynthesis, well an overview regarding traditional modern methods for extraction, isolation, analysis, identification. A summary biological profile applications also provided.
