摘要: Abstract The limited proteolysis accompanying the transformation of ovalbumin into plakalbumin has been measured using pH-stat. reaction consists at least two steps, first step being opening a single peptide bond in closed chain molecule, leading to formation an open intermediary protein form which lost ability crystallizing needles. In further this is converted plakalbumin.
