Thermophysical characterization by solar convective drying of thyme conserved by an innovative thermal-biochemical process

摘要: Abstract The solar drying for preservation of food products is the most attractive and promising application. It leads to reduce water activity in product thereby prolongs its shelf life by decreasing microbial contamination. Thymus satureioides, a medicinal aromatic plant, was conserved using nondestructive innovative process integrating sustainable energy. based on combination pretreatment aqueous solutions natural organic acid followed partial convective drying. Therefore, it overridden understand mechanisms influencing treated thyme compared with kinetics witness thyme. effect conditions (season, temperature ranging from 50 80 °C volume flow rates 150 300 m3/h) (concentration citric acid) efficiency were studied. Furthermore, effects temperature, season, rate total phenolic content also investigated. Moreover, nine mathematical models have been used describe curves. best which represented Wang-Singh Midilli-Kucuk models. Hence, characteristic curve pretreated determined.
