摘要: Publisher Summary This chapter discusses enzymes degradation and synthesizing starch their physical properties mode of action. Many gaps in the knowledge remain. Some are lack information regarding so many these disagreement over molecular size, nature isozymes, active site. To make matters worse, where such is available, it often contradictory, have not yet been sufficiently purified to permit adequate characterization. Much more work remains be done, this helps focus attention on some problems still outstanding field.
