Mango Sapburn: Components of Fruit Sap and Their Role in Causing Skin Damage.

摘要: Damage caused to the skin of mango fruit by contact with sap exuded from cut or broken pedicel reduces consumer acceptance and storage life fruit. Mangoes Kensington cultivar are particularly susceptible sapburn injury. On centrifugation, separated into two phases. Skin damage was predominantly upper non-aqueous phase. A major component this phase terpinolene which gave symptoms indistinguishable injury when applied surface. The same type could be induced application synthetic undiluted, diluted in hexane as an aqueous emulsion. Non-volatile components distillation were not damaging skin.
