Integrating wireless sensor networks with statistical quality control to develop a cold chain system in food industries

摘要: Cold chain management is of importance for manufacturers in the food industry since they face dilemma having to choose between frozen storage and cool delivering products retailers or end-consumers. Frozen incurs high-energy consumption preservation products, whereas involves constant threat bacterial decay. Contemporary cold-chain development temperature control usually focuses on single logistic rather than serving multiple channels. In order overcome aforementioned deficiency, this study proposes a time-temperature indicator (TTI) based system, which uses wireless sensors collecting data implements formulation Critical Control Point (CCP) criteria throughout entire delivery process. particular, approach an Internet-of-Things (IoT) architecture as well international standards named ISO 22,000. More importantly, four new business models including (1) cold home-delivery service; (2) Convenience store (CVS) indirect delivery; (3) CVS direct (4) flight kitchen service, are successfully developed conducting performance assessment. Experimental results indicate that proposed framework can increase annual sales braised pork rice from 4.44 million bowls over 6 bowls, create more distribution channels extra revenue US$6.35 million, reduce 10% energy central kitchens enhance turnover electricity US$14.23 raised US$18.64 per kilowatt hour. Wireless adopted construct system,Switching achieved chain,Annual increased bowls,More 150 jobs 6.35 $USD created,10% reduction costs accomplished electricity.
