摘要: Abstract A modified soft degumming process of crude rapeseed oil for maximizing phospholipid removal and minimizing losses antioxidants was proposed optimized by response surface methodology. The effects water volume, time, concentration ratio sodium dodecyl sulfate to disodium ethylenediaminetetraacetate on the phospholipids phenolics antioxidant capacity oils were evaluated. removed from (94.9–98.7%) more effectively than industrial acid (95.3%). Moreover, revealed high phenolic content (20.0–22.1 mg sinapic (SA)/100 g) capacity, as determined ferric-reducing power (FRAP = 301–328 μmol Trolox equivalent (TE)/100 g), 2,2-diphenyl-1-picrylhydrazyl (DPPH = 528–739 μmol TE/100 g), 2,2′-azinobis-3-ethylbenzothiazoline-6-sulfonic (ABTS = 1300–1505 μmol TE/100 g) methods. predicted optimum volume (11.5 mL), time (19.7 min), (=1) resulted in total phospholipids = 67 mg/kg, phenolics = 20.8 mg SA/100 g, FRAP = 313 μmol TE/100 g, DPPH = 617 μmol ABTS = 1346 μmol TE/100 g. Replacement can improve stability with potent capacity.
