摘要: Abstract: This chapter addresses health-related effects associated with the ingestion of oxidized fats. The first reviews knowledge about nutritional quality changes and formation lipid peroxidation products in then presents current fats on blood profile, fatty liver development, carnitine homeostasis, thyroid function hormones, endogenous exogenous antioxidant defense mechanisms, glucose tolerance insulin sensitivity as well inflammation.
