摘要: This study was investigated to determine the conditions for an auto-aging system placed within a kimchi refrigerator optimal fermentation, as well prolongation of dongchimi storage time. Various fermentation characteristics stored at different temperatures () were compared. The pH and acidity associated with highest levels overall acceptability , respectively. In order establish time point conversion storage, fermented or until reached designated points (0.1, 0.2, 0.3%), then 1 week. According sensory evaluation, 0.2% evidenced after week among samples. conclusion, we suggest temperature, respectively, index in refrigerator.
