摘要: Abstract Propionibacterium shermanii P59 produced free proline in large amounts from peptide-containing media. Enzymatic casein hydrolysates were better substrates than meat hydrolysates. Some was by proteolysis of casein, but the production rate slower peptidase action on Proline biosynthesis arginine probably more important glutamic acid, and less significant peptide hydrolysis producing proline. Intracellular small compared with Release peptides coincided release cell proteins enzymes into medium.
