摘要: Purified allergens are required to detect cross-contamination with other allergenic foods and understand allergen interaction components of the food matrix. Pure also used for diagnosis treatment allergies. For example, serological methods being developed improve quality diagnosis, reduce need challenge tests. In addition, recombinant evaluated as candidate vaccines safe efficacious specific immunotherapy. indispensable reference materials calibration standardization between different laboratories operators risk assessment in industry. Therefore, there is a well-defined purified allergens. this context, panel 46 from plant animal sources has been purified, either or forms, within EU-funded EuroPrevall project. These have characterized by battery diagnostic tests demonstrating that they constitute an authentic, library comparable quality. The review summarizes applications, potentials limitations key techniques characterization authentication these preparations, special emphasis on protein purity identity, folding, post-translational modifications immunochemical properties. One area identified development powerful analytical techniques, such mass spectrometry nuclear magnetic resonance, routine applications allergy management.
