摘要: Abstract The aim of this study was to examine the effect bovine milk fat globule membrane (MFGM) on virulence Escherichia coli O157:H7. MFGM extracted from raw or heat-treated milk, resulting in 2 preparations differing protein composition. Both heated and exerted an inhibitory Shiga toxin gene expression by E. O157:H7 (ratios −7.69 −5.96, respectively). Interestingly, stronger with MFGM, a larger decrease fliC (ratio −9.43). difference observed between could be explained composition preparations.
