摘要: The effects of six different polyglycerol esters fatty acids (PGEs) as nonionic emulsifiers on the physicochemical properties and stability β-carotene nanoparticles in oil-in-water dispersions produced by an emulsification/evaporation technique were examined. particle size was measured a laser diffraction technique, retention during various preparation steps storage determined HPLC. In prepared nanodispersions decreased with increasing degree glycerol polymerisation decreasing carbon number acid group PGE. containing monooleate generally larger than that presence monolaurate.
