Effect of polyglycerol esters of fatty acids on physicochemical properties and stability of β-carotene nanodispersions prepared by emulsification/evaporation method

摘要: The effects of six different polyglycerol esters fatty acids (PGEs) as nonionic emulsifiers on the physicochemical properties and stability β-carotene nanoparticles in oil-in-water dispersions produced by an emulsification/evaporation technique were examined. particle size was measured a laser diffraction technique, retention during various preparation steps storage determined HPLC. In prepared nanodispersions decreased with increasing degree glycerol polymerisation decreasing carbon number acid group PGE. containing monooleate generally larger than that presence monolaurate. During at 4 °C, although content showed significant (P < 0.05) decrease period, distribution almost unchanged all nanodispersions. general, mean diameter ranged from 85 to 132 nm. light their ability physically stabilise formation, it is suggested PGEs high may be useful best stabilisation obtained using 10 g kg−1 decaglycerol Copyright © 2004 Society Chemical Industry
