摘要: Cantonese noodles are a possible end-use product for spring wheat (Triticum aestivum L.). This may provide an export opportunity growers and be alternative to the pan bread market. It might also produce dual-use both markets. Knowledge of genotype environment effects on quality characteristics relating noodle discoloration will assist breeders in developing cultivars. Nine genotypes were grown at four North Dakota locations 2000 2001. Samples analyzed kernel polyphenol oxidase (PPO) activity, flour protein content, brightness, ash content. Yellow alkaline Cantonese-style sheets made from milled each sample brightness (L*) yellowness (b*) color measurements taken 0 24 h evaluate discoloration. Genotypes having low PPO moderate bright kernels, concentrations produced high after 24h. Genotype by interactions significant related quality, due part rank changes means across environments. IDO 470 was identified as desirable color, indicating that with acceptable can region. The development if select traits maximize but neutral or have no impact quality.
