CHARACTERISATION, IDENTIFICATION AND TECHNOLOGICAL PROPERTIES OF PSYCHOTROPHIC LACTIC ACID BACTERIA ORIGINATING FROM TUNISIAN FRESH FISH

摘要: ABSTRACT One hundred sixty psychrotrophic lactic acid bacteria (LAB) isolated from wild and aquacultured fresh fish were identified by biochemical molecular methods using 16S-23S rRNA spacer analysis 16S rDNA sequencing. LAB strains characterised according to their technological properties including acidifying capacity, antibiotic resistance proteolytic, lipolytic enzymatic activities, as well antimicrobial against pathogenic spoilage in order select the most suitable for use starter cultures biopreservation of seafood products. The majority displayed activities (Salmonella arizonae, Staphylococcus aureus, Listeria monocytogenes, Pseudomonas aeruginosa, Escherichia coli Aspergillus flavus) dominant Gram-negative (Pseudomonas fluorescens, Aeromonas hydrophila, putida Photobacterium damselae). A total 39 isolates having important selected further properties. Low proteolytic detected all azocasein fat, respectively. Moreover, showed activity reducing pH less than 4.38 at 37C after 72 h. Finally, studied resistant penicillin, gentamicin, colistin, ciprofloxacin, norfloxacin, nalidixic acid, erythromycin, tetracycline streptomycin.
