摘要: Probiotic bacteria are used in production of functional foods and pharmaceutical products. They play an important role promoting maintaining human health. In order, to produce health benefits probiotic strains should be present a viable form at suitable level during the product is shelf life until consumption maintain high viability throughout gastrointestinal tract. Many reports indicated that there poor survival products containing free cells [1]. Providing living with physical barrier resist adverse environmental conditions therefore approach currently receiving considerable interest [2].
