摘要: Overall composition, and fatty acid, amino nucleotide-type compound levels in wild (Haliotis gigantea) cultured abalone discus hannai), were investigated. Wild had a higher moisture content than did abalone, but the converse was true for crude protein content. In overall lipid level viscera meat, with greatest level, (w/w), observed of abalone. The major acids palmitic acid (16:0), oleic (18:1n-9), eicosatrienoic (20:3n-3, ETA), eicosapentaenoic (20:5n-3, EPA), docosahexaenoic (22:6n-3, DHA). omega-3 (EPA DHA) A total 17 detected all samples, most which high aspartic glutamic glycine, arginine, low amounts cysteine, methionine, histidine. Glutamic abundant acids. free related to taste score. taurine, alanine, taurine abundant, present at compared contents nucleotide-related compounds 12.93 mg/100g 30.75 mg/100g, respectively.
