摘要: The growing interest in the substitution of synthetic food antioxidants by natural ones has fostered research on vegetable sources and screening raw materials for identifying new antioxidants. Oxidation reactions are not an exclusive concern industry, widely needed to prevent deterioration other oxidisable goods, such as cosmetics, pharmaceuticals plastics. Polyphenols major plant compounds with antioxidant activity, although they only ones. In addition, biological properties anticarcinogenicity, antimutagenicity, antiallergenicity antiaging activity have been reported Special attention is focussed their extraction from inexpensive or residual agricultural industries. aim this review, after presenting general aspects about antioxidants, focus (mainly polyphenols) industrial wastes, well summarize available data factors affecting stability, and, some cases, active identified.
