Influence of dietary nitrate on nitrite content of human saliva: Possible relevance to in vivo formation of N-nitroso compounds

摘要: Vegetables and vegetable juices with concentrations of nitrate between 27 4031 ppm were ingested by 11 volunteers in 30 experiments. Variations nitrite saliva determined for up to 7 hr at intervals or 60 min. The increase the amount secreted salivary glands was found depend directly on ingested. Nitrite concentration correlated content. This suggests that there is a direct relationship amounts diet. average 20 ppm/100 mg possible relevance these findings endogenous formation N-nitroso compounds gastro-intestinal tract discussed.
