摘要: An overview is presented describing the characteristics of meat (game and venison) obtained from various land animals birds that are not conventionally considered domesticated. The species discussed include those derived wild harvesting or farming, such as game birds, deer, antelope, kangaroos, rabbits, Suid species, well camelids, buffalo, bison. Physical chemical quality attributes considered, focusing on carcass characteristics, composition, sensory aspects. Particular emphasis placed meat’s nutritional value, its potential to contribute food security health a growing population.
