摘要: Carbohydrate/citrate cometabolism in Lactococcus lactis results the formation of flavor compound acetoin. Resting cells strain IL1403(pFL3) rapidly consumed citrate while producing acetoin when substoichiometric concentrations glucose or l-lactate were present.
