摘要: Abstract The survival curves of Yersinia enterocolitica ATCC 35669 inactivated by high hydrostatic pressure were obtained at four levels (300, 350, 400, and 450 MPa) in sodium phosphate buffer (0.1 M, pH 7.0) (350, 450, 500 UHT whole milk. Tailing was observed all the curves. A linear model three nonlinear models fitted to these data performances compared. regression for had coefficients ( R 2 ) values 0.785–0.962 mean square error (MSE) 0.265–0.893. residual plot strongly suggested that a function not appropriate as there strong curvature plotted data. using log-logistic 0.946–0.982 MSE 0.110–0.320. Weibull 0.944–0.975 0.153–0.349. These results indicated both better describe inactivation kinetics Y. milk buffer. Among studied, modified Gompertz produced poorest fit number parameters reduced from two so greatly simplified. still comparable full model. Since no significant effect on shape factors 300–400 MPa 400–500 milk, developed predict pressures different experimental pressures.
