摘要: BACKGROUND: Solid fat was produced from mustard oil and palm stearin through lipase-catalyzed reaction, in which linoleic acid intentionally incorporated. For optimizing the reaction condition of melting point ω6/ω3 fatty acids, response surface methodology (RSM) employed with three variables such as substrate mole ratio (MO) to (PS) (X1), temperature (X2) time (X3). RESULTS: The predictive model for solid adequate reproducible due no significant lack fit (P = 0.0764), P-value (0.0037) model, satisfactory level coefficient determination (R2 0.92). R2 were 0.89 0.0132, respectively, but 0.0389). affected by ratio, whereas had effect. influenced not time. Based on ridge analysis, lower predicted decreasing time, increasing temperature. CONCLUSIONS: producing a specific 34.57 °C, combination 1:2 65.17 °C 21.46 h (X3) optimized, optimization confirmed under same conditions. contained palmitic (37.8%), (24.8%), oleic (21.3%), erucic (9.7%), its content 30.3% 10.3% at 20 30 respectively.
