Fatty acid composition of the phospholipids and other lipids in milk.

摘要: Summary Milk lipids were separated by silicic acid chromatography and identified infrared spectrometry paper chromatography. In agreement with our previous results, the major phospholipids phosphatidyl cholines (PC), ethanolamines (PE), sphingomyelins, but cerebrosides, serines (PS), inositols also present. The various showed marked differences in fatty composition as determined gas-liquid Mole percentages of saturated acids higher from cerebrosides sphingomyelins (86 87) than triglycerides (72), PC (43), PS (32), PE (24). Triglycerides contained less higher-molecular-weight even odd C 20 to 24 acids. No appreciable amounts below 10 found phospholipids, traces present cerebrosides. principal was stearic PS, palmitic other lipids. Since unsaturated PE, amounted over 50% total acids, they must occur at both α - β -positions glycerol moiety these phospholipids.
