摘要: The purpose of this work was to determine the kaempferol content in three red wines Calabria, a southern Italian region with great number certified food products. Considering that wine cultivar, climate, and soil influence qualitative quantitative composition flavonoids Vitis vinifera L. berries, analyzed samples were taken from 2013 vintage. Moreover, Gaglioppo samples, assigned Controlled Origin Denomination (DOC), also investigated production years 2008, 2010, 2011. In addition analysis kaempferol, which is present higher concentration than other wines, vitro assays performed evaluate, for first time, inhibition human monoamine oxidases (hMAO-A hMAO-B). Molecular recognition studies carried out provide insight into binding mode selectivity hMAO-A isoform.
