摘要: A reuterin (3-hydroxypropinaldehyde, 3-HPA)-producing isolate from a human infant fecal sample was identified as Lactobacillus reuteri BPL-36 strain. The organism displayed broad-spectrum antimicrobial activity. gene (gdh) encoding glycerol dehydratase subunit detected by PCR, thus confirming its reuterin-producing ability. Reuterin concentration of 89.63 mM/mL obtained in the MRS–glycerol medium after 16 h incubation at 37 °C. required to inhibit growth Pseudomonas aeruginosa, Escherichia coli O157: H7, Salmonella typhi, Staphylococcus aureus, and Listeria monocytogenes found be 1.0, 2.0, 4.0, 10.0 AU/mL, respectively. Antimicrobial efficiency test using cell-free supernatant co-incubated along with different pathogens done. Viability all tested decreased increasing contact time supernatant. S. typhi observed most susceptible among organisms, number viable cells hugely declined continued, resulting reduction 6 log cycles (100 % inhibition) 4 treatment. Production biogenic amines degradation mucin strain were not detected.
