摘要: Because of the wide use chromium‐containing feed, much hexavalent chromium (Cr(VI)) tends to accumulate in pork. In order decrease toxicity Cr(VI)‐containing pork for human beings, high‐energy electron beam (HEEB) irradiation was used reduce highly toxic Cr(VI) low trivalent (Cr(III)) lean, fat, and marbled HEEB could efficiently nondestructively both free adsorbed pork, achieving highest reductive efficiency (RE) 98.03%. Therein, hydrated electrons (eaq−) hydrogen radical (•H) generated during process probably played key roles reduction. The effects dose, initial concentration Cr(VI), pH, temperature, salinity, oil on RE were investigated obtain optimal reduction conditions, proving high universality this approach. This work provides a clean low‐cost method removing from which is important ensure food safety. describes facile, nondestructive, meat product, may have potential application prospect ensuring quality
