Identification of enzymatic activities involved in agave fructan consumption by Bifidobacterium longum subsp. infantis ATCC 15697

摘要: Abstract Metabolism of complex non-commercial fructans by Bifidobacteria has not been explored. In this work the production extracellular, cell-bound and intracellular β-fructofuranosidases probiotic Bifidobacterium longum subsp infantis ATCC 15697 in culture medium containing agave fructan chicory inulin as carbon source was evaluated. The analysis profile products formed hydrolysis three enzymatic fractions proteomic B. indicated importance B.longum_l1, an exo-β-fructofuranosidase, metabolism prebiotics studied. We found that hydrolyzes through exo-type mechanism involving B.longum_l1 exclusively consumes low molecular weight first spite their structure, suggesting growth these two structurally different substrates depends more on than its chemical nature.
