摘要: Abstract Considerable controversy exists in the literature regarding toxicity of coffee, including its possible carcinogenic and anticarcinogenic properties. This study reports on reaction 1,3,7-trimethylxanthine (caffeine) with hydroxyl radical (·OH), as investigated by electron spin resonance (ESR) trapping. The ·OH was generated Fenton (Fe 2+ + H 2 O ) well chromium(V) . results show that caffeine effectively scavenges a rate constant ∼ 5.9 × 10 9 m −1 sec is comparable those other efficient scavengers. ESR measurements provide evidence caffeine-derived oxygen-centred formed suggest biochemical basis for understanding reported properties related methylxanthine compounds.
