摘要: Publisher Summary This chapter discusses the application of membrane in food and beverage industry. The principles concepts behind science separations were quite alien at that time compared to traditional unit operations prevailing their plants. Since industry operates on a smaller margin profit than most other process industries, it was difficult justify expense discarding what had always worked (e.g., thermal evaporation) installing new operation reverse osmosis) not yet been completely proven "work" let alone acceptance technology by such conservative is due no small part (a) advances material membranes, (b) improved module design, (c) better understanding fouling phenomena, (d) increased awareness managers membranes.
