摘要: Abstract The contribution of the European food sector to total amount greenhouse gases emissions is equal one fifth. Footprint indicators together with Life Cycle Assessment have emerged be useful tools analyze and report environmental performance. In this paper impact aged vinegar produced from Grechetto Sagrantino grapes varieties analyzed. wine performed calibrate model. Impact assessment studied evaluating: carbon footprint, ecological water acidification, eutrophication, ozone layer depletion, photochemical oxidation. new approach proposed in leads obtainment a complete analysis vinegar, which can help small farm choose more sustainable production methods, also optimizing logistics.
