摘要: Amino acid sequences of chicken (Gallus gallus) meat proteins: myosin, tropomyosin, troponin, collagen and connectin taken from SWISS-PROT EMBL databases have been analysed using PROTEIN computer program searching for fragments identical to bioactive peptides bonds susceptible the action endopeptidases in protein chains. Chicken proteins contain with antihypertensive (connectin), immunomodulating (myosin, collagen), antithrombotic (collagen), antibacterial embryotoxic (collagen) activity also neuroactive collagen, connectin) occurring amino frequency higher than that expected probability appearance given random sequences. There is a theoretical possibility release by endopeptidases. Such especially occurs case hydrolysis proteinase K (EC 3.4.21.14). The occurrence may be applied quantitative comparison value as source peptides, although different affinity their receptors susceptibility proteolysis should into consideration.
