摘要: The suitability of delignified cellulosic (DC) material supported kefir yeast to ferment raw materials that contain various single carbohydrates, for the production potable alcohol and alcoholic drinks, is examined in this investigation. Results are reported fermentations carried out with sucrose, fructose, glucose synthetic media. Repeated batch at initial sugar concentrations were performed 30 degrees C presence aforementioned biocatalyst. results clearly show feasible yields range 0.38-0.41 g/g, 7.6-8.2% v/v, fermentation time 90-115 h, conversion 92-96%. DC fermented 11-fold more rapidly than free cells 9-fold comparison kissiris kefir. main volatile byproducts such as amyl alcohols (mixture 2-methyl-1-butanol 3-methyl-1-butanol), ethanal, ethyl acetate formed all products. formation 65-110 ppm high even higher obtained traditional wine yeasts. increase concentration media resulted an contents volatiles. fine aroma was product fructose could be attributed percentage on total efficiency same individual sugars or a mixture glucose. When whey raisin extracts fermented, lower but better.
