Fumonisins and fumonisin-producing Fusarium occurrence in wheat and wheat by products: A review

摘要: Abstract Cereals, including wheat, rice, barley, maize, rye, oats and millet, make up the majority of production crop sector, being most important food sources for human consumption. Cereals are commonly colonized by Fusarium species often contaminated with mycotoxins that have a major impact on health, welfare productivity. Among produced species, fumonisins usually present in maize maize-based products, but last ten years natural occurrence wheat different regions been observed. This review provides information products around world. Also, data ecophysiology proliferatum, one main associated to fumonisin presence included. Some strategies reduce problem The possible exposure risk these toxins through consumption areas where this cereal represents staple is discussed.
